		<description>What a good read.  I will try your sandwich and share my favorite for the time being (it may change tomorrow).

Hard boil eggs, peel and chop but not too fine.  Add mayo, dijon mustard, black pepper, small amount of rice vinager and celery seed - just like I may my deviled eggs.  Stir all together.  Toast bread, lightly butter if deired.  Have two slices cooked bacon on hand and split in to crosswise.  Put slighly warmed back (microwave for about 10 seconds to just remove chill if pre-cooked and in refer), add desired amount of egg mixure and there you go!

I lightly toast the bread - usually a good whole wheat type.

I know this wuld be good alongside some good pickles but our crop was did not mature last year so did not get any pickles made (we live way up in the woods with short growing season).
